Living Pesto Pasta

This is one of my favourite meals to make – Living Pesto Pasta made with fresh zucchini and kelp noodles. Zucchini noodles are so fresh and juicy – a super refreshing, light and easy to digest meal to make for the hot summer months.

Whenever I want to turn people on to raw food, I serve them this meal. Every single time I serve it to a person interested in raw food, they always say how much they love it and how easy it would be to switch from regular wheat pasta to living pasta. Once I made the switch, over 6 years ago now, I would never dream of going back.  Living pasta dishes can be made in any number of ways, with a tomato marinara, or a curry-style or mushroom sauce, but if I had to choose, I go with Pesto Pasta.

Living Pesto Pasta

Living pasta is so easy and fun to make. I use a spiral slicer, that you can buy at Amazon¬†for only $35, well worth the investment, considering everything you can do with it. When making this dish, if you want, you can make a combination of zucchini noodles and kelp noodles, also a great additional ingredient to any raw food kitchen. I use Gold Mine Kelp Noodles, another great affordable find on amazon. You can either choose to combine the two or not, it’s up to you, a living pasta with only zucchini noodles is just as excellent. I love how fresh and juicy this living pasta tastes.

For this living pasta dish, follow this recipe to make raw vegan pesto.

Take a handful of fresh living noodles and place it into a bowl. Place one big scoop of pesto into the bowl and mix it together until the pesto is spread evenly. I then take a spoon and make a nice ‘nest’ or ball with it, and then gently place it on a plate.

What would pasta be without parmesan cheese? I love adding a little raw vegan parmesan, that’s quick and easy to make, and adds a beautiful aesthetic of the white on green for a beautiful presentation. Top that with some fresh diced basil and perhaps a few slivers of tomato and there you have it, a tasty and easy to make raw living pesto pasta.

You can serve this living pasta with a side of salad or raw dehydrated crackers or a side of soup if you like…whatever tickles your fancy!
